You are taking his words too much at face value. he cannot ever harm her or give her pain. This vinegar was nothing and he covered it by drinking it himself to see how far he was going. So no , he is never unrestrained animal that only happens when nandu is harmed.

Yes , he is trying to cover his weakness that is no survival with Nandu by trying to show to the world that he hates her and doesn't want her by using these tricks. This is also for Nandini because her will to fight for them is giving him hope and he is scared of that.
